Ewa was born Polish but with an Italian heart. At the age of 19, she went on her first trip to Rome and realized immediately that that was the city she belonged to and where she would spend, on and off, 11 years of her life before settling down in America. Throughout her many voyages around the world, she accumulated a vast experience in all types of cuisine and beverages but none struck a chord in her as much as the many small Enotecas (wine bars) and Mozzarella bars around the cobblestone streets of Rome, where she enjoyed many dishes characterized by the simplicity of the recipes and more importantly by the quality of the ingredients.

It has been her lifelong dream to open a Bar just like the ones in Rome and finally, her dream has come true.


Rembar is proud to introduce our executive Chef Emmanuel who self-taught himself to make pastries at a very young age in his Mother’s kitchen at age 11 and his passion grew from there. He studied at the culinary school of La Rochelle in the south of France and worked in the industry internationally until ending up in Miami and slowly working his way north to some very well-established local business like La Geulue and Pistache French Bistro. He joined Rembar shortly after opening and elevated our little mozzarella bar to a whole new level of international specials he prepares weekly ranging from Wagyu beef tataki with Japanese sauce, Mediterranean tajine , kefta balls , salmon coconut curry Indian style, prosciutto wrapped filet mignon with truffle mashed potatoes and so on. Besides our weekly specials, all our desserts are made fresh in-house as well as our flatbreads. We welcome all his suggestions and appreciate his passion for fine dining and his love of pastries. He shares our commitment to only using the finest ingredients and utilizing local vendors whenever possible.
